Baked Salmon with Orange and Fennel

2 Salmon fillets (6 ounces each)
1/2 cup Orange juice (or Pineapple
juice)
1 bulb Fennel, trimmed and diced
1 teaspoon Dill, fresh
1/2 teaspoon Parsley flakes
Sea salt and freshly
ground black pepper, to taste
- Preheat the oven to 350 degrees Fahrenheit.
- Place the fillets skin side down in a glass baking dish.
- Pour the orange juice over the fillets.
- Sprinkle diced fennel over in an even layer, and season with
remaining spices. Cover the dish with aluminum foil.
- Bake for 20 to 25 minutes, or until fish flakes easily with
a fork.
- Transfer to serving dish or individual plates and serve immediately.
