Baked Salmon with Orange and Fennel    
Serves 2
 
Preparation time: 10 minutes
Cooking time: 25 minutes
Ready in: 35 minutes
 
2 Salmon fillets (6 ounces each)
1/2 cup Orange juice (or Pineapple juice)
1 bulb Fennel, trimmed and diced
1 teaspoon Dill, fresh
1/2 teaspoon Parsley flakes
Sea salt and freshly ground black pepper, to taste
 
 
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place the fillets skin side down in a glass baking dish.
  3. Pour the orange juice over the fillets.
  4. Sprinkle diced fennel over in an even layer, and season with remaining spices. Cover the dish with aluminum foil.
  5. Bake for 20 to 25 minutes, or until fish flakes easily with a fork.
  6. Transfer to serving dish or individual plates and serve immediately.
