Savory Quinoa Pancakes

Ingredients:
1/8 cup onions, chopped
1 cup quinoa flour
2 tablespoons arrowroot
1/8 teaspoon
baking soda
1/8 teaspoon sea salt
1/8 teaspoon sage, dried
1/8 teaspoon thyme, dried
2 tablespoons coconut oil
3/4
cup unsweetened rice milk
Cooking Instructions:
- Chop onions and sauté in 2 tablespoons water until soft.
- Mix together dry ingredients, then add coconut oil and rice milk.
- Lightly grease nonstick skillet or griddle with 1/2 tablespoon coconut oil and preheat.
- Pour mixture onto hot griddle. When edges begin to curl, flip pancakes and continue cooking
until light brown.
- Remove from heat and serve immediately.
